Ingredients:
3 cups green beans
1 can chickpea drained and rinsed
1 kidney beans drained and rinsed
2 green onions, thinly sliced
1/4 cup chopped fresh parsley
1tbsp minced jalapeno peppers
dressing
3 tbsp olive oil
3 tbsp wine vinegar
1 clove garlic, minced
1 tsp dried oregano
1/4 tsp each salt and pepper
Directions:
1. in a large bowl, whisk together oil, vinegar, garlic, oregano, salt and pepper, set aside
2. in a pot of boiling water, cover and cook green beans until tender- crisp 5 mins drain and add to vinaigrette
