Threadgill’s Creole Cabbage

Creole Cabbage - one of my favorites
Ingredients:
6 slices bacon, diced
2 cups yellow onions, diced
4 cups tomatoes, diced
1 head green cabbage, cut into 1 1/4-inch squares
4 cups tomato sauce
1 cup water
1/2 teaspoon tabasco sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
Directions:
1. SAUTE DICED BACON, add onion, and continue cooking. Add all other ingredients and bring to a boil, stirring to avoid scorching. Turn down to a simmer and stew until cabbage is done, about 1 hour. Makes 10 big servings.
