Certain ‘Superfoods’ are especially good for the summer as they contain nutrients that can help nurture your skin and protect it from sun damage. This delicious sandwich is a real powerhouse of nutrition and tastes fabulous. It takes minutes to make – perfect for busy people who want a lighter bite that still delivers real nutritional punch.
Ingredients:
1 skinless chicken breast, cooked
2 slices whole meal bread (thin slices)
1 slice butter, softened
1/4 ripe avocado
1 lemon, juice of
2 slices prosciutto
watercress
1 vine ripened tomato, sliced
Directions:
1. Spread the bread lightly with a little softened butter.
2. Place 1/4 ripe avocado (it has to be ripe, otherwise it’ll be bitter and revolting) and a squeeze of lemon juice in a small bowl and mush with a fork until smooth and creamy. Spread this on to one of the slices of bread.
3. Slice the chicken and place on top of the avocado. Add the prosciutto (remove the visible fat), and a couple of leafy stems of watercress. Finally add the tomato.
4. Top with the second slice of bread and tuck in!
