from NYC famous Jewsih eatery, a recipe for a fluffy matzoh balls to accompany chicken soup- recipe appears in their cook book.
Ingredients:
1 tbs salt plus 1/4 tsp salt
4 large eggs
1/3 cup schmaltz ( rendered chicken fat )
1/4 tsp pepper
1 tbs baking powder
1 1/3 cups matzoh meal
Directions:
1. Fill a stockpot 3/4 full of water.
2. Add the tbs salt and bring to a rapid boil
3. While water is boiling, crack eggs into a bowl and beat well.
4. Beat in the schmaltz, 1/4 tsp salt, pepper, and baking powder.
5. Slowly fold in the matzoh meal and lastly beat mixture vigorously until completely blended.
6. Wet hands, folding mixture in your palms and shape 1 1/4 inches in diameter ( they will double in size when cooked )
7. Gently place the balls in the boiling water and reduce heat to a simmer.
8. Cover and cook about 25 minutes.
9. Remove with a slotted spoon and place 1 or 2 in a bowl of soup
