This version of the dish is from a DC restaurant called The Prime Rib and it was found in Dining Out & Dining In , a cookbook published in 1981. I have halved the original recipe. Cooking time is marinating time. Ingredients:
1 1/2 pints fresh strawberries |
1/4 cup cointreau liqueur |
1/4 cup kirsch |
1 1/2 cups creme fraiche |
3 sprigs fresh mint |
Directions:
1. Clean & hull the strawberries and marinate them in the Cointreau and Kirsch for 3 hours, stirring occasionally. 2. After they have marinated fold in the crème fraiche, then spoon the mixture into 3 tulip shaped champagne glasses. Garnish each serving with a spring of mint. |
