This is a low fat brownie from Secrets of Fat-Free Cooking by Sandra Woodruff. This book was my starting point to delicious, low fat cooking. I renamed it the no way! brownie because after people eat it and I tell them it's low fat, they go No way! Your kidding me.
Ingredients:
1/4 cup unbleached flour, plus
1 tablespoon unbleached flour
1/4 cup oat bran
1/3 cup cocoa powder
3/4 cup sugar
1/4 cup skim milk powder
1 pinch baking soda
1/4 cup chocolate syrup
3 egg whites
1 teaspoon vanilla
Directions:
1. In a large bowl combine first 6 ingredients and stir to mix well.
2. Next (in same bowl) stir in chocolate syrup, egg whites, and vanilla. At this point you can fold in a 1/4 cup of chopped nuts, carob chips, dried fruit, etc.
3. Coat a 8 inch square pan and an icing knife with cooking spray. (this batter is veeeery sticky, hence the use of the icing knife).
4. Use the icing knife to spread the batter evenly into the pan and bake at 325F for 20 minutes or until edges are firm and the centre is almost set.
5. Cool them down or eat them warm - either way these are great!
