The Most Awesome Cream Of Pumpkin Soup

This is a wonderful, delicious, holiday soup that is just awesome! I made this using my basic recipe (for a girls home this weekend) and then changed it a little by adding gingersnaps as a thickener, the result is really awesome! Read more ! It is rather thick so if you want it thinner, use less ginger snaps! Also the times are approximate and serving will vary ( I served 20 small bowls with a lot left over) depending on serving size! You can probably get 20 servings easily!
Ingredients:
3 cans solid pumpkin(libby's) not pumpkin pie filling
1 stick butter
1 onion, chopped
1/2 bell pepper, chopped
4 or 5 cloves garlic, minced
3 stalks celery, chopped
6 slices bacon, cut into small pieces
1/3 cup dark brown sugar
2 teaspoon curry powder
1 teaspoon coriander powder
1 1/2 tablespoons or to taste creole spice
1 large (48 oz) can swanson's chicken broth
1 (32 oz.) carton swanson's chicken broth
1 quart half and half
1/2 bag of nabisco's ginger snap cookies9more or less to taste)
1 teaspoon cracked black pepper
dash of onion powder
Directions:
1. In large soup pot, cook onions, bell pepper, garlic, celery, and bacon in butter until veggies are tender(about 4 to 5 minutes)
2. Add broth and bring to a boil.
3. Lower heat and cook for 5 to 7 minutes.
4. Stir in spices, brown sugar, and pumpkin.
5. Cook for 10 minutes, stirring occasionally to prevent sticking.
6. Add half and half and continue to cook over medium/low heat for 4 to 5 minutes.
7. Working in small batches, Transfer a few cups of the soup to a smaller pot.
8. Bring the smaller batch to a boil.
9. Add 3 or 4 gingersnaps and whisk till dissolved into soup.
10. pour this batch into a blender and puree until smooth(about 1 minute)
11. Pour into a container or other soup pot until all batches are complete.
12. Repeat and Continue working in small batches until done.
13. Transfer back into soup pot and keep warm until ready to serve.
14. Serve with croutons or additional crumbled cooked bacon.
15. This is a thick soup if you do not want it so thick use less ginger snaps! Enjoy!
