The Hermit's Pork Chops and Gravy

Basic and Simple,..but good.
Ingredients:
6 pork chops
2 cups flour
2 teaspoons salt
1 1/2 teaspoons pepper
4 cups oil
1 sliced onion
3 cups water
Directions:
1. Mix flour with salt and pepper.
2. Dip each pork chop in water.
3. Dredge with flour until covered.
4. Place in skillet of preheated oil, and cook on medium heat until golden brown, pour all oil from skillet, except 1/4 C.
5. Place pork chops back in skillet with onions.
6. Add water and simmer until gravy is thick.
