The Great Kiwi Mince Pie Filling

Ingredients:
600 g beef mince
2 medium onions, chopped
2 carrots, diced
2 stalks celery, diced
2 tablespoons tomato paste
1 teaspoon thyme
1 teaspoon oregano
3 cups beef stock
1 1/4 ounces mushroom soup mix (dry kind)
2 teaspoons cornflour
salt and pepper
Directions:
1. Brown mince in a heavy saucepan in a little oil.
2. Add vegetables, herbs, stock and simmer for 1 hour.
3. Mi together the soup mix and cornflower with 1 cup of water and add to the mince, simmer for 20 minutes.
4. Season to taste and then cool.
