A hybrid between an omelet and a sandwich, eggs mixed with cheese and folded around bacon, plus assorted meats and vegetables of your choice is served between toast to make a hearty breakfast or brunch main dish. The flavor of Tillamook™ Cheddar cheese is truly fantastic with this recipe.
Ingredients:
* 4 slices bread, toasted (bagels work, as well).
* 3 slices bacon
* 2 - 3 slices cooked, chopped ham or deli meat
* 3 eggs, lightly beaten
* 1/2 cup grated cheddar cheese (tillamook™ is preferred by author)
* 1 pinch salt and ground black pepper to taste (optional)
* 1/4 cup finely chopped onion (optional)
* 1 tablespoon fresh chives, chopped (optional)
* 1/4 cup chopped fresh mushrooms (optional)
* 1/4 cup green bell pepper, finely chopped (optional)
* 1 teaspoon finely chopped jalapeno pepper (optional)
* 2 drops hot pepper sauce (e.g. tabasco™), or to taste (optional)
* 2 tablespoons mayonnaise, miracle whip™ or to taste (optional)
Directions:
1. Over medium flame heat up the skillet and cook the bacon until it has turned crisp and brown in color. Remove excess oil by setting it on paper towels. Then crumble into pieces when it has cooled off.
2. Using a bowl, stir well eggs and 1/4 cup of Cheddar cheese. Put in a dash of salt and pepper. Then cook the egg mixture on the skillet on medium flame. Put in the bacon, ham, onions mushrooms, green pepper, jalapeno or hot pepper sauce and chives on top of the egg when the bottom portion has cooked. With the remaining cheddar cheese sprinkle it on top then carefully fold the mixture of egg in half to cover the fillings. Continue cooking until the bottom has turned golden or until the cheeses have melted. Turn it over to cook the other half.
3. Arrange 2 pieces of toast on two plates then spread mayonnaise evenly on each slice. Not cut the egg mixture into two and place it on top of each toast. Put the remaining toast on top then cut the Omwich™ into two for serving.
