For the past three years I’ve brought the New Year in with a three-day fast. And each time I’m eager to return to whole, healthy raw foods. The following recipe makes a simple yet satisfying meal that eases the transition from fast to food.
Ingredients:
8 kale leaves
1 carrot, grated
3/4 cup purple cabbage
2 celery ribs
4 radishes
4 broccoli florets
4 cauliflower florets
1 green onion
1/2 avocado
1 tablespoon hemp seeds
apple cider vinegar
Directions:
1. • Chop kale, broccoli, cauliflower and green onion.
2. • Grate carrot.
3. • Thinly slice celery, radish and purple cabbage, and break up cabbage slices.
4. • Throw ingredients into 1 or 2 serving bowls (recipe serves 2, after a fast anyway).
5. • Top with cubed avocado and hemp seeds.
6. • Dress with apple cider vinegar.
