I cook some version of this quite often and just thought everyone did this sort of thing. Some friends recently pointed out that no, everyone does not think crazy like me. So, circle the wagons and batten down the hatches. Read more . This is usually a breakfast thing but I have made it for lunch. Aller insense ici (go crazy here). The recipe below is per person so use the right cast iron skillet for your crowed.
Ingredients:
2 – 3 eggs (depending on size)
1 tbs butter or olive oil
1 small to medium russet potato (cut into 1/4” cubes)
2 strips smoked bacon, chopped
salt & fresh ground pepper to taste
the following are optional suggestions. these are just to get you thinkin so go crazy from here. onion, tomatoes, fresh mushrooms, chile peppers, tofu, artichoke hearts, squash, fresh asparagus, ham, capers, escargot, the kitchen sink.
spices: think robin williams here; basil, garlic, cilantro, oregano, curry powder or use palm oil to cook the potatoes in. yes
Directions:
1. Cook your heart out! Wait, I need to do better than that. I know that would be enough for most of you but what about the beginner cooks? This is supposed to be a recipe, right? Okay.
2. 1. Put the oil in your trusty cast iron skillet and heat it up pretty good
3. 2. Put in the bacon and potatoes and mess that around a bit, turn the flame down low, cover and cook until the potato is 1/2 cooked, stirring occasionally.
4. 3. Now is the time to add your optional ingredients (which I hope you have prepped) and finish cooking uncovered until 90% done.
5. 4. Here you can do the sorta traditional omelette thing and whip your eggs then add them to your “stuff” & mix well or you can opt to arrange the “stuff” and break your eggs right on top, either way cover and cook slowly until the eggs are done to your liking. Serve with maybe a touch of sour cream on top, avocado is also nice.
6. This is called sole food because doin it is good for your sole. Bon Appétit
