My boys loved the Breakfast Jack sandwiches from Jack In The Box. As simple as this recipe is, this is my version of the basic Breakfast Jack. You can make this in under 10 minutes so there's no excuse not to feed children a healthy breakfast. Read more . These can be wrapped up in paper towels or aluminum foil and taken to school. You can eat them in the car on the way to school or packed away in lunch boxes. Since the egg yolks were cooked hard, the sandwiches are not messy at all.
Ingredients:
2 whole wheat hamburger buns with sesame seeds on top, toasted
2 slices of canadian bacon (or 4 slices of precooked bacon, warmed)
2 whole large eggs
4 slices of whole milk american cheese, unwrapped
2 tsp. butter or healthy margarine at room temp. or melted
salt and pepper
Directions:
1. In a large frying pan, place the canadian bacon and fry until heated through.
2. Pour the two eggs into the pan while frying the bacon and crack the yolks, spreading the yolk across the white part of the egg.
3. Separate the eggs while cooking (into 2 separate fried eggs.)
4. Sprinkle the eggs with salt and peppper.
5. Flip the eggs over and place 2 slices of cheese on top of each egg.
6. Remove pan from flame.
7. Spread butter or margarine over the toasted hamburger buns.
8. Place the eggs with cheese and bacon on the bun and wrap or serve.
9. Quick and easy.. Its not much of a recipe but its a great breakfast sandwich!
10. You can go healthier with sliced turkey ham or even a vegetarian protein sausage patty. You can even add a hash brown patty to the sandwich!
