The Best Vegetarian Chili In The World

Hearty, loaded with vegetables, easy to make- I made this for company and everyone raved about it. The men in the room couldn't believe it was meatless! One of our faves, for sure!
Ingredients:
1 tbsp oilve oil
1/2 med onion, chopped
2 bay leaves
1 tsp cumin
2 tbsp dried oregano
1 tbsp salt
2 stalks celery, chopped
2 green peppers, chopped
2 jalapeno pepper, chopped (optional)
3 cloves garlic
2 (4oz) cans chopped green chilis, drained
2 vegetarian burger patties, crumbled
3 (28 oz) cans diced tomatoes (drained)
1/4 c chili powder
1tbsp ground black pepper
1 (15oz) can red kidney beans, rinsed and drained
1 (15 oz) can garbanzo beans (chickpeas), rinsed and drained
1 (15oz) can black beans, rinsed and drained
1 (15 oz) can whole kernal corn
Directions:
1. Heat oil in a very large pot over medium heat. Stir in onion; season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender. Mix in celery, green peppers, jalapenos, garlic, and green chilis. When vegetables are heated through, mix in vwegetarian burger patties. Reduce heat to low, cover pot, and simmer 5 mins.
2. Mix the tomatos into the pot. Season with chili powder and pepper. Stir in kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes.
3. Stir in corn, and continue cooking 5 minutes before serving. Remove bay leaves.
4. Yum!
