From A Book of Favorite Recipes compiled by Highlawn Baptist Women of Highlawn Baptist Church from about 1982. This was the cookbook from my Nana's church in Huntington, WV and my Nana gave two of them to my momma in her stocking, one for her and one for me, which my momma gave mine to me when I married. These really do make some great pancakes. The original recipe calls for all-purpose flour, but I've had great success with the whole-wheat. I've also successfully used this recipe for waffles.
Ingredients:
2 tablespoons canola oil
1 egg
1 cup 1% low-fat milk
1 cup whole wheat flour
2 tablespoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
Directions:
1. In a large bowl, beat together oil, egg and milk. In another bowl, sift together flour, baking powder, sugar and salt.
2. Add dry ingredients to liquid ingredients, blending well. Stir in 1 additional tablespoon of milk.
3. Fry on lightly oiled griddle.
