So I was looking for a good oatmeal raisin cookie recipe but no recipe seemed to fit the bill. So I decided to create my own recipe by looking at about a dozen other recipes crossing my fingers hoping that all the measurments would yeild an edible cookie. OMG!!! I was so lucky. These bad boys are crisp chewy and if I do say so myself THE BEST OATMEAL RAISIN COOKIE YOU NEVER HAD. Please enjoy. This is a huge batch but I do not think that will be a problem once you try them.
Ingredients:
1 1/2 cups unsalted butter, softened
1 (8 ounce) cream cheese, softened
2 cups brown sugar
1 1/2 cups white sugar
2 teaspoons vanilla
1/4 teaspoon maple extract
3 eggs
3 cups flour
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
2 cups raisins
3 cups quick-cooking oats
1 1/2 cups sweetened flaked coconut
1 1/2 cups crisp rice cereal
1 1/4 cups pecans, chopped
3/4 cup toffee pieces
Directions:
1. In a mixing bowl, cream butter and sugars. Add egg, vanilla and maple; mix well.
2. Combine flour, baking soda, baking powder and salt; add to creamed mixture and mix until flour is incorporated.
3. Stir in oats, then add Rice Krispies, coconut, pecans, toffee and raisins. Using a small cookie scoop evenly space a dozen cookies on parchment paper lined cookie sheets.
4. Bake at 370 degrees for approximately 9-12 minutes or until lightly browned. Cool on the cookie sheet.
