The Best Fancy Florentine Sausage Stuffing (Or Dressing)

Once I found this recipe years ago, I quit making cornbread dressing and oyster dressing at the Thanksgiving extravaganza known as dinner. This is by far the best tasting and easiest stuffing (dressing) I have ever had. The Italian sausage paired with the spinach is moist and GOOD! Food purists can use day old bread or homemade breadcrumbs, but for a shortcut, use bread stuffing mix.
Ingredients:
2 tablespoons butter
1 garlic clove, crushed
1 lb italian sausage
1 onion
1/2 cup celery
1/2 cup carrot
1 (16 ounce) can chicken broth
1 (8 ounce) package frozen chopped spinach
2 (8 ounce) packages white bread stuffing mix
Directions:
1. Melt butter.
2. You can use HOT Italian sausage (we like it spicy) or the sweet Italian sausage. Cut in small pieces and brown in butter with garlic.
3. Chop veggies very fine and add to pan.
4. Saute about 8 minutes.
5. Add everything to a 9 x 11 baking dish.
6. Drizzle the top with turkey drippings or add chicken broth and 3/4 C water.
7. You may add pepper to taste but don't add salt unless you taste and taste again. The broth and sausage should provide all the saltiness you need.
8. Bake at 325 for one hour.
9. If the top seems to be browning too much, put a piece of foil loosely over the top.
