A very unique sauce I created for Dining for a Dollar. I tested this a sample of this on a chicken sandwiches, and I have come up with a final recipe that is not only kid friendly, but very flavorful. A great, and unique way to prepare this for any BBq sandwich. This has a 24 hour refrigeration time, which is the cooking time.
Ingredients:
1 medium onion, finely chopped
4 garlic cloves, minced
1/4 cup vegetable oil
5 teaspoons chili powder
1/2 teaspoon paprika
2 teaspoons celery seeds
1/4 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon cayenne powder
1 3/4 cups tomato ketchup
1/8 cup pepsi, regular
1 cup brown sugar
3 tablespoons dried oregano
1/8 cup cider vinegar
1/3 cup frenchs prepared mustard
1/3 cup worcestershire sauce
1 teaspoon cocoa powder
1/4 cup maple syrup
3 teaspoons liquid smoke
1/4 cup pepsi, regular non diet
Directions:
1. Heat oil over medium heat, and add onion, then saute for 2-3 minutes.
2. Add the garlic cloves, and saute for 2 minutes.
3. Stir in chili powder, paprika, cayenne pepper, salt, black pepper,cocca powder, and celery seeds. Stir until well blended.
4. Add the remaining ingredients tomato ketchup, pepsi, brown sugar, dried oregeno, cider vinegar, French mustard,worcestershire sauce, maple syrup, liquid smoke, and pepsi.
5. Stir continuously with a wooden spoon to combine together.
6. Reduce heat to low, and simmer uncovered stirring occasionally over low heat (do not cover pot), the textures and flavors will diminish.
7. Cool to room temperature, cover and refrigerate for 24 hours before using, and serving.
