Ingredients:

Directions:

  1. Boil the shrimp for 2 minutes in 1 1/2 cups water with the juice and rind of 1/2 lemon. Drain. Combine with all the other ingredients except the salad mix (I use a baby spring mix). Add salt and pepper to taste (1 tsp is just for rough guidance). For each serving, put some salad in a bowl and top with the shrimp mixture. Be sure to drizzle on some liquid from the bottom of the bowl.
