Thai Seared Shrimp W Tomato Basil And Coconut

It's amazing how a simple blend of foods can come together so easily yet taste so intensely flavored. Sure to be a big hit with curry lovers! Great over rice.
Ingredients:
1 tbs. peanut or vegetable oil
1 lb. uncooked peeled deviened medium shrimp, tails removed (thawed if frozen)
1 cup sliced red onion
1-2 tsp. red curry paste
1 can diced tomatoes, drained
1 tbs. lime juice
2 tsp. packed brown sugar
1/2 cup cocnut milk (not cream of coconut)
1/4 cup chopped thai basil or basil leaves
Directions:
1. Heat oil over medium high heat in a 10 inch skillet.
2. Cook shrimp and onion in oil for 2 minutes, stirring constantly
3. Stir in curry paste, cook for 1 minute
4. Add tomatoes, lime juice, and brown sugar
5. Heat to boiling, reduce heat and simmer for 1 minute
6. Stir in coconut milk and basil
7. Heat over low heat until hot
