Thai Salad Dressing--No Fat

This is an all-purpose salad dressing/marinade made specifically to reduce the calories in otherwise good salads; it drenches the greens with so much flavor, that you can use less(or even none) of the regular high- calorie/high-fat/high sodium dressing that you normally use. Compare serving sizes and see!!!!
Ingredients:
1/4 cup lime juice -fresh
3/4 cup lemon juice -fresh
8 cups orange juice -simply orange fresh juice
1 cup white wine vinegar
1 cup soy sauce -low sodium
1 teaspoon hot sauce
18 grams garlic chili pepper sauce-a taste of thai brand--andre prost, inc.(this is two tablespoons)
10 tablespoons garlic-fresh
10 tablespoons ginger root -fresh
Directions:
1. Chop garlic into a small dice
2. Chop ginger into a small dice-or
3. Chop each roughly and finish with a blender(separately), adding some vinegar
4. Combine 3 juices(all fresh) and vinegar in a saucepan or pot and then heat on medium heat-do not boil
5. Add chopped garlic, chopped ginger, and seasonings(hot sauce and garlic sauce) and stir well
6. Take off heat and cool completely
7. Store in glass or plastic container(s) in refrigerator. SERVING SIZE IS 1/4 CUP. Can be used immediately, but better after a few days....Shake occasionally-
8. After a week, strain out garlic and ginger which can then be used as a marinade-Freeze any marinade not used after 2 weeks..Strained dressing lasts indefinitely. Some separation is to be expected.
9. You can add the following without affecting the calories/salt content-garlic powder, onion powder, dried ginger, sugar substitute, chile flakes.
10. The recipe makes about 10 cups. Always have a few 1/4 cup bottles ready for eating out. Good on green salads and slaw.
11. The calories and fat are low, but sodium content is higher than I would like. Note that using bottled lemon or lime juice will increase the sodium content unless it is sodium free, as will the use of prepared garlic or ginger.
12. Makes a great Bloody Mary-add to low sodium V8 Juice.
