Thai Papaya Salad (Som Tom)

This salad is a classic dish from Northeastern Thailand. It is often quite spicy, especially when made authentically. Green papayas are often hard to find in the US, so carrots are often substituted.
Ingredients:
1/8 cup chilies
8 cloves garlic
2 dried shrimp
4 cups papaya
1 cup green beans
1 carrot
1/4 cup tamarind juice
4 tbsp lime juice
2 tbs. fish sauce, to taste
2 tbs. sugar
2 tomatoes
1/4 cup roasted peanuts
Directions:
1. Mix the tamardind, lime, fish sauce, sugar, garlic and chilies together in a mortal and pestle (Traditional thai uses a wooden one to avoid bruising the papaya) and grind them together into a sauce. Then mix in the remainder of the ingredients and toss.
