Thai Mushroom Soup

Great appetizer or meal starter. Full of great flavors but light.
Ingredients:
1 pound fresh mushrooms
5 fresh chilies
3 kaffir lime leaves crushed
1 stalk lemon grass
2 cups vegetable stock
1 cup coconut milk
1/2 cup sliced bamboo shoots
3 tablespoons lemon juice
3 tablespoons light soy sauce
2 stems cilantro
1/2 teaspoon fine sea salt
Directions:
1. Cut mushrooms into small pieces and slice the chilies lengthwise.
2. Bring the water to the boil and add the kaffir leaves, lemon grass and mushrooms.
3. Simmer 5 minutes and add remaining ingredients.
4. Serve immediately.
