A tangy mix of sweet, sour and hot, this salad makes an unusual appetizer or accompaniment to a spicy main course.
Ingredients:
1 lime, juice and zest
2 tablespoons fish sauce
2 teaspoons superfine sugar
2 garlic cloves, minced
2 green chili peppers, deseeded and finely sliced
2 mangoes, peeled, stoned and cut into matchstick strips
2 carrots, cut into matchsticks
2 zucchini, cut into matchsticks
mint sprig, to garnish
Directions:
1. Place the lime juice, fish sauce, sugar, garlic and chilis in a bowl and stir until the sugar has dissolved.
2. Place the fruit and vegetables in a bowl and toss with the dressing.
3. Sprinkle with the lime zest and garnish with mint sprigs.
