Western cake with Eastern ingredients !!! The result is just awesome !!!
Ingredients:
1 c roasted macadamia nuts , crushed
3 l thai mangoes , more than 2 kg
dice and keep 100 gm aside .
save the juice and puree along with the remaing cubes .
must have 1 c puree
250 g butter
1 tsp vanilla essence
1 c caster sugar
4 l eggs
1 1/2 tsp baking pwd
2 c plain flour
1/2 c roasted macadamia nuts , chopped
icing sugar to taste .
whip 500 ml cream with 1 tsp nutmeg - until thick
1 mango sliced
Directions:
1. Pre heat the oven at 170 deg C .
2. Grease a 22 cm cake pan .
3. 1 C unsalted roasted macadamia nuts - crush in blender . set aside .

5. Beat butter , vanilla , and the 1/2 C sugar until thick and pale .
6. Add the reamining 1/2 C caster sugar again .
7. Beat well .
8. Now , add the eggs and beat well .

10. In a bowl add the crushed nuts , baking pwd and the flour .
11. Mix the puree and the butter mixture .

13. Sprinkle the chopped macadamia nuts and diced mangoes
14. Swirl it in .
15. Bake for 50 mins .
16. cool .
17. Dredge with icing sugar .

19. Serve along with cream and mangoe slices
