A low fat version of this popular Thai recipe
Ingredients:
400 g (light) coconut milk
16 oz chicken breast, diced
12 oz broccoli, trimmed into small florets
12 oz sugar snap peas, trimmed
2 tablespoons thai green curry paste
4 oz basmati rice
Directions:
1. Cook the basmati rice according to the packet instructions
2. Heat the coconut milk and curry paste in a wide, shallow (saute) pan
3. Add the diced chicken and simmer for 5 - 10 minutes
4. Add the prepared broccoli and simmer for a further 3 minutes
5. Add the trimmed sugar-snap peas and simmer for a further 2-3 minutes
6. Serve over the cooked rice
