Thai Fragrant Rice
Ingredients:
1 cup brown rice
1 tbsp olive oil
1 onion, chopped
2 tbsp ginger, minced
1 1/2 tsp cumin seeds
1 1/2 tsp coriander seeds
10 g vegetable stock
1/4 cup cilantro, chopped
25 g lemon grass
50 g lime
Directions:
1. Finely chop lemon grass
2. Remove lime zest
3. Heat oil add onion, ginger, spices, lemon grass and zest, cook 2-3 min
4. Add rice and cook 1 min
5. Add stock and bring to boil
6. Reduce heat and cover for indicated time
7. Stir in cilantro, serve with limes
