This is a very nice side dish to go with any Thai cuisine. I love the wonderful tastes in this soup. Hope you do to0.
Ingredients:
3 cups thai coconut water approximately 2 coconuts
3 cloves peeled garlic
2 piece peeled ginger
1/4 cup freshly squeezed lemon juice
1/4 cup cold pressed extra-virgin olive oil
1/4 cup soy sauce
1 tablespoon curry powder
Directions:
1. Combine all ingredients in blender until smooth.
2. Pour into a serving bowl.
3. Using a ladle remove and discard any foam that rises to the top.
4. Garlish with avocado, chives, tomato, pepper, mint, basil and/or or cilantro.
