This cucumber salad with a sour chili dressing goes perfectly with grilled chicken and fish.
Ingredients:
1 cucumber, cut into ribbons with a peeler
1 gem lettuce, shredded
5 ounces bean sprouts
3 ounces cilantro, roughly chopped
3 ounces mint, roughly chopped
1 teaspoon rice vinegar
1/2 teaspoon light brown sugar
2 red chili peppers, deseeded and finely chopped
Directions:
1. Mix the dressing ingredients together, stirring until the sugar has dissolved.
2. Place the salad ingredients in a bowl and pour over the dressing, mixing well to combine.
3. Serve immediately.
