Thai Cucumber Salad

This is a refreshing sweet/sour cucumber salad. Great on a hot day and very good with asian dishes.
Ingredients:
1/4 cup rice vinegar (seasoned or unseasoned)
1 tablespoon sugar
1 large cucumber
1 pinch dried red pepper flakes (to taste)
salt
Directions:
1. Combine rice vinegar, sugar and red pepper flakes in medium bowl; mix well.
2. Peel cucumber and cut in half lengthwise; scrape out and discard seeds. Cut into thin slices.
3. Place sliced cucumbers in bowl with vinegar mixture.
4. Cover, refrigerate overnight.
5. Season to taste with salt before serving.
