Thai Crab Salad

I love Thai food, its so quick and easy to make. If you prepared your crabmeat ahead of time, this salad is ready before you know it. It is soooo good. I really enjoy the flavors and textures in this salad. It makes a light and refreshing meal.
Ingredients:
1 1/2 cups crabmeat, cleaned and coarsley chopped
4 green onions, chopped finely
1/3 cup cilantro, fresh, chopped
2 cups baby lettuce, iceberg or 2 cups romaine lettuce
1/3 cup cucumber, unpeeled, diced
salad dressing
1 garlic clove, crushed
1 inch ginger, peeled and grated
2 kaffir lime leaves, torn into peices
1 lime, fresh, juiced
1 teaspoon fish sauce
1 -2 teaspoon brown sugar (optional)
Directions:
1. On a nice platter arrange your lettuce and add the crabmeat, scallions, cucumber and cliantro.
2. Mix your ingredients for the salad dressing together and pour over the plated salad.
3. Serve immediately, great with fresh fruit and homemade bread.
