Thai Chicken and Coconut Soup

Ingredients:
3 cups chicken stock
1 teaspoon lime rind, grated
1/4 cup lime juice, fresh
1 tablespoon lemongrass, fresh peeled
2 tablespoons fish sauce
1/2 teaspoon ginger, minced
1/2 teaspoon thai chile, minced
1 lb chicken, boneless skinless cut into bite-sized pieces
14 ounces coconut milk
2 tablespoons cilantro, fresh chopped
Directions:
1. Combine the 1st 7 ingredients in pot and bring to a simmer over medium heat.
2. Stir in chicen and coconut milk.
3. Cook 3 minutes or until chicken is done.
4. Sprinkle with cilantro and serve.
