Texas Style Chili

This is my attempt at a bean free chili that isn't just a bowl of meat.
Ingredients:
2 lbs. chuck or sirloin roast, trimmed and cut into 1 in. chunks
1 red bell pepper, cut into 1 in. pieces
1 green bell pepper, cut into 1 in. pieces
1 lg. yellow onion, but into 1 in. wedges
1 lb. white mushrooms, quartered
2-3 cloves garlic, minced
1 (16 oz.) can whole tomatoes, roughly chopped
1 (16 oz.) can tomato sauce
4 c. chicken or beef stock
2 tbs. chili powder
1 tsp. sweet paprika
1/4 tsp. cayenne pepper
fresh ground black pepper to taste
Directions:
1. Heat a 6 qt. pot over med.-high heat. Add cooking oil and half of the beef. Brown the beef in batches.
2. Return the beef to the pot, and add all other ingredients. Stir well and bring to a boil.
3. Cover and reduce heat to low. Cook for at least 1 hour, but up to 2 hours would be better.
