This is a family favorite Appetizer. You can adjust the heat by using more or less jalapeno pepper. Serve with gluten free corn chips.
Ingredients:
1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans
1 (12 ounce) can shoe peg corn
1 bunch green onion
2 fresh jalapeno peppers
4 roma tomatoes
1 bunch fresh cilantro
2 garlic cloves
gluten free italian dressing
Directions:
1. Rinse peas, beans, corn.
2. Chop onions (including white part), jalapenos, tomatoes and cilantro.
3. Crush garlic.
4. Add all vegetable ingredients and add dressing to taste.
