Fresh cilantro and garlic really wake up canned beans and corn in this quick and healthy dip/ side dish.
Ingredients:
1 can black beans rinsed and drained
1 can fiesta corn drained
1/2 cup vegetable oil
1/4 cup red wine vinegar
3-4 cloves minced garlic
1/4 cup sliced green onion, may substitue minced red onion
1 cup chopped tomato
1 chopped avacado
handful fresh cilantro chopped
Directions:
1. Combine all ingredients in a bowl and toss gently.
2. Serve with Frito scoops if desired.
