My mother made this for me as my wedding cake! It's one of my favorites. I hope you'll enjoy it as much as I do.
Ingredients:
cake
2 c flour
1 1/2 c granulated sugar
2 eggs
2 t baking soda
1 can crushed pineapple (19 oz)
icing
i c coconut
1 c brown sugar
1/2 c melted butter
6 t carnation milk
Directions:
1. Preheat oven to 325F
2. Mixed first four ingredients until well blended
3. Then add the pineapple, mix well
4. Pour cake batter into a 9 x13 baking pan between 40 and 45 minutes
5. For icing, mix all ingredients but the coconut in a saucepan.
6. Bring to a boil for about 5 minutes
7. Let stand and cool
8. Add coconut, stir well
9. Lay on the cake
10. Enjoy!
