This is my version of a Mexican Layered Salad. Always a crowd pleaser! So easy as you can make it ahead of time.
Ingredients:
6 cups chopped romaine lettuce
1-1/2 cups red, green, orange or yellow bell peppers or a combo of different colors
14 oz. can pitted black olives, drained, sliced in half
3 roma tomatoes, seeded and chopped
3 cups shredded cabbage (i use coleslaw mix)
2 avocados, peeled, cut in 1/2” cubes and sprinkled thoroughly with
lime juice
1 cup sour cream
1/3 cup salsa
1/2 teas. chili powder
1-1/2 cups mexican cheese blend
1-1/2 cups slightly crunched tortilla chips
Directions:
1. Layer salad ingredients in order given. Mix together sour cream, salsa and chili powder and whisk to combine. Pour over salad ingredients and then top with cheese and crunched Tortilla chips. Cover and refrigerate at least 4 hours.

3. This looks really pretty in a glass salad bowl as you can see the layers but it serves better in a nice glass 9”x13” dish.
