This is one of my favorite squash dishes. It is so good and spicy and goes with just about anything. I usually serve it with grilled chicken or pork since it is so filling. You won't be disappointed. Ingredients:
2-1/4 pounds summer squash quartered lengthwise and thinly sliced crosswise
2/3 cup finely chopped yellow onion
4 ounce can chopped green chiles
4-1/2 ounce can chopped jalapenos drained
1/2 teaspoon salt
2-1/4 cups grated extra-sharp cheddar cheese, divided
1/4 cup all-purpose flour
3/4 cup mild salsa
4 scallions thinly sliced for garnish
1/4 cup finely chopped red onion for garnish
Directions:
1. Preheat oven to 400.
2. Coat rectangular baking dish with cooking spray.
3. Combine squash, onion, chiles, jalapenos, salt and 3/4 cup cheese in a large bowl.
4. Sprinkle with flour and toss to coat.
5. Spread mixture in the prepared baking dish and cover with foil.
6. Bake for 45 minutes.
7. Spoon salsa over the casserole and sprinkle with remaining cheese.
8. Bake uncovered for 30 minutes.
9. Sprinkle with scallions and red onion.
