Tex Mex Squash N Zuchini Casserole

This is from my friend Carrie! Great when the summer veggies are in! I throw some chopped tomato on top!
Ingredients:
2 small yellow squash, sliced
2 small zucchini, sliced
1 medium onion, sliced
1 teaspoon garlic, minced
2 tablespoons oil
4 ounces green chilies, chopped
2 cups yellow corn
1/2 cup cheddar, grated
1/2 cup monterey jack, grated
1 teaspoon cumin
***1 ripe red tomato, chopped
Directions:
1. Lightly saute the squash, zucchini, onion, and garlic until
2. just soft.
3. Toss with the remaining ingredients.
4. Place in a lightly oiled 2-quart casserole dish.
5. Bake at 400 for 20 minutes.
6. Top with chopped tomato before serving if desired
7. Serve warm with grilled chicken or pork.
