This is the quickest meal! And it is sooo good.
Ingredients:
1 1/2 cups cubed, cooked chicken (, , leftovers are fine)
16 ounces salsa
1/2 cup chicken broth
1/2 cup chopped onion
1/2 cup chopped green pepper
1/4 cup sliced ripe olives
2 teaspoons chili powder
1 cup minute rice
3/4 cup shredded cheddar cheese
Directions:
1. Stir together, in dutch oven, first 7 ing.
2. Bring to a boil.
3. Stir in rice.
4. Remove from heat.
5. Sprinkle with cheese.
6. Cover and let stand about 5 minutes or till rice is tender.
