Another delight from my regional collection. This is not your ordinary waffle. It is savory and can be used for breakfast, brunch as an appetizer or even as a side dish with grilled chicken. I like it as a main dish with sour cream, tomatoes, pepper jack cheese, salsa and nachos over the top. Read more . Yummy.
Ingredients:
1-1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1-1/3 cups grated sharp cheddar cheese
1 tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1 teaspoon mild chili powder
1-2/3 cups milk
2 eggs lightly beaten
1/3 cup vegetable oil
2 tablespoons finely chopped green chilies
Directions:
1. Preheat the waffle maker.
2. In large bowl combine flour, cornmeal, cheese, baking powder, sugar, salt and chili powder.
3. Add milk, eggs, vegetable oil and chilies and mix just until moistened.
4. Bake in preheated waffle maker according to manufacturer's instructions.
5. Serve with your favorite salsa, sour cream and additional grated cheese.
