Tex-Mex Pasta Salad
Ingredients:
1 cup tomato juice
1 teaspoon dried cilantro
2 teaspoons chili powder
1 teaspoon ground cumin
1 pinch cayenne pepper
1 (4 ounce) can green chilies, drained
1/2 cup chopped scallion
10 ounces linguine, cooked al dente
1 cup canned tomato
1 cup chopped green bell pepper
Directions:
1. Combine tomato juice, cilantro, chili powder, cumin, cayenne pepper, chilies, and scallions.
2. Top with tomatoes and green peppers.
