Tex-Mex Meatloaf

This is a recipe I've had for years. Since my husband likes my traditional meatloaf I haven't made it in years.
Ingredients:
1 1/2 lbs ground meat
1 1/2 cups cheddar cheese, grated
1 cup tomato juice
1/2 cup onion, chopped
1 (4 ounce) can green chili peppers, chopped (mild or medium)
4 cups corn chips
1 egg
2 garlic cloves, chopped
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon pepper
sliced olive
Directions:
1. Preheat oven at 350 degrees. In large bowl combine meat and 1 cup cheese, tomato juice, chili powder, egg, garlic and seasonings.
2. Stir in 2 cups crushed chips.
3. Bake 40-45 minutes at 375.
4. Remove and top with cheese and remaining chips. Add olives.
