Tex-Mex Chili Cheese Rice

Kids love this. I serve with fritos crushed on top, tastes like a quesadilla.
Ingredients:
1 lb ground beef
1 (15 ounce) can chili with beans
1 (14 1/2 ounce) can diced tomatoes
1 cup water
2 cups minute rice
8 ounces velveeta cheese
Directions:
1. Brown and drain meat.
2. Add chili, tomatoes and water; stir.
3. Bring to a boil, stir in rice and velveeta.
4. Bring to a boil.
5. Cover and remove from heat. Let stand 5 minutes.
6. Stir until well blended.
