Tex-Mex Chicken Breasts

This tasty dish takes a few minutes to prepare. Serve with Mexican Rice and zucchini sauteed in butter /olive oil and oregano.
Ingredients:
4 boneless skinless chicken breasts
1 tablespoon taco seasoning
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon ground pepper
1/2 cup taco sauce or 1/2 cup red enchilada sauce
4 tablespoons butter, room temperature
1/2 cup mayonnaise
1/2 cup shredded cheese (i use sharp ceddar or pepper jack)
1/2 teaspoon tabasco sauce
paprika
Directions:
1. Pre-heat oven to 350 degrees. Mix garlic powder, salt, and pepper with taco seasoning and sprinkle over both sides of chicken pieces. Pour taco or enchilada sauce on top of each piece. Mix butter, mayo and cheese together. Spread 1/4 mix on each breast, gently spreading almost to the edges. Sprinkle on paprika. Bake for 20-30 minutes, uncovered, or until juices run clear.
