Tex Mex Breakfast

Hearty breakfast with a kick. A little grated cheese is a nice addition.
Ingredients:
6 strips bacon, diced
1/2 cup chopped onion
1 teaspoon minced garlic
5 cups potatoes, small dice (or frozen)
1 (4 ounce) can chopped green chilies
1 cup tomato, diced
4 eggs
Directions:
1. In lg skillet fry bacon until crisp.
2. Remove, set aside.
3. Drain fat from skillet, leaving 3 T.
4. In skillet, saute onions and garlic.
5. Add potatoes and chilis.
6. Cook until potatoes are done and browned, 20 minutes.
7. Add tomatoes, and bacon.
8. Drop eggs on top.
9. Cover and simmer until eggs are done.
