Tequila Lime Shrimp

Super easy flavorful shrimp appetizer. Also goes excellent as shrimp tacos, burritos or fajitas. Serve with some mango salsa and you have a wonderful appetizer.
Ingredients:
1 lb. jumbo raw shrimp, tail-on, deveined and shelled
1/4 c. fresh cilantro, chopped coarsely
4 cloves garlic, minced
juice of 1 lime
1 tsp. grated lime zest
1/4 c. tequila (if none available, cooking white wine works beautifully!)
1 teaspoon coarse ground black pepper
1/2 c. unsalted butter
Directions:
1. Mix cilantro, garlic, lime juice, zest, tequila and pepper together.
2. Add shrimp and toss to coat.
3. Marinate in fridge for 30 minutes.
4. Preheat oven to 350 degrees.
5. Put butter in 8x8 or 9x9 square baking dish, place in oven.
6. When butter is melted, remove from oven.
7. Put shrimp in baking dish with slotted spoon and toss with butter, replace in oven.
8. Bake for 15 minutes or until done.
