Tequila Lime Chicken Tacos With Cumin Lime Vinaigr...

Love this little twist on tacos. The vinaigrette is great on a tossed salad or fish. Makes 1/2 c dressing. Serve with Mexican Rice, Black or Refried Beans, Chips and Salsa
Ingredients:
cumin-lime vinaigrette
3 tablespoons white wine vinegar or cider vinegar
2 tablespoons fresh lime juice
1 tablespoon minced parsley or fresh cilantro
1/2 teaspoon ground cumin
1 teaspoon sugar
1/2 cup olive oil
chicken tacos
3 boneless, skinless chicken breast, julienned
2 t butter
2 t olive oil
1/2 onion, chopped fine
1 package taco seasoning
1 t cumin
1 t chopped garlic
1/4 c chicken stock (in place of water, use amount as directed on seasoning packet
1 small can green chiles, drained
juice and zest of 1/2 lime
1 t tequila
toppings
shredded lettuce
chopped tomatoes
sliced black olives
sliced jalepenos - optional
shredded cheese
sour cream
hard or soft taco shells
Directions:
1. Cumin Lime Vinaigrette:
2. Whisk all ingredients together until well blended.
3. Refrigerate dressing.
4. Chicken Tacos:
5. Melt butter with olive oil in nonstick skillet
6. Add remaining taco ingredients
7. Cook about 8-12 minutes, until chicken is cooked through and liquid reduces
8. Put it Together:
9. Heat hard shells in oven, or soft shells in damp paper towels in microwave
10. Stir together dressing, lettuce, tomatoes and olives - Use dressing a little at a time here, will have some left (and jalepenos)
11. Place filling in taco shells, top with salad, cheese and sourcream
