This marinated London Broil is equally delicious served hot or cold, and is perfect for a pot-luck dinner. Thinly slice any leftover steak for French Dip sandwiches or serve over a Caesar Salad.
Ingredients:
2 tablespoons vegetable oil
1/2 cup shallot, chopped
3 large garlic cloves, finely chopped
1 teaspoon onion powder
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
crushed red pepper flakes, to taste
1/4 cup fresh parsley, finely chopped
2 tablespoons brown sugar
1 teaspoon allspice
1 teaspoon ground ginger
1 cup beef broth
1/3 cup soy sauce
1/4 cup dry red wine
1/4 cup balsamic vinegar
2 lbs boneless london broil beef (about 1 1/2-inches thick) or 2 lbs top round steaks (about 1 1/2-inches thick)
Directions:
1. In a medium-size, heavy-bottomed saucepan heat the oil over moderate heat.
2. Add the shallots and saute until soft (about 5 minutes).
3. Add the remaining ingredients EXCEPT THE MEAT; bring to a boil.
4. Remove marinade from heat and let cool.
5. Pour the cooled marinade into a large resealable plastic bag; add the beef. With the bag securely closed turn gently until beef is evenly coated. Refrigerate overnight; turn bag ocassionally.
6. Transfer the beef to a platter and bring to room temperature.
7. Meanwhile, lightly grease the grill rack. Preheat grill to medium heat.
8. Remove steak from marinade; reserving marinade. Grill the beef 3 to 4 inches from the heat source for 8 to 10 minutes per side, or until desired doneness.
9. Brush with reserved marinade after turning. DISCARD LEFTOVER MARINADE.
10. Let the beef stand for 5 minutes; slice into thin slices across the grain.
