Quick, easy, made with canned vegetables and soups and a pound of meat. Both grownups and kids love it.
Ingredients:
1 lb hamburger or 1 lb italian sausage or 1/2 lb ready-to-use baked pizza crust, each
1 onion, diced (optional)
1 (15 ounce) can kidney beans (several friends prefer ranch style beans)
3 (15 ounce) cans minestrone soup (campbells condensed, with no added cans of water)
2 (15 ounce) cans peas and carrots, drained
2 (15 ounce) cans corn, drained
1 (15 ounce) can tomatoes, diced
1 (15 ounce) can potatoes, diced, drained
4 cups water
2 teaspoons dried italian seasoning or 1 teaspoon dried basil and 1 teaspoon dried oregano
Directions:
1. Brown meat (and onion if used), let cool, then crumble meat.
2. While meat is browning, place all other ingredients in a four quart stew pot, begin heating to a boil.
3. Add meat and bring to a boil, simmer 10 minutes.
4. Note: You can leave out the 4 cups of water, and not drain the cans of vegetables, but the stew will be much too salty for most people. If you use only hamburger meat, you may want to add black pepper to your taste.
